Easy overland breakfast of overnight oats, the most versatile breakfast you can prepare in advance both during and before your overland trip.
We were never really into healthy overland breakfasts, you know, the bowl of oats or muesli covered in strawberries, in fact all the images of us cooking breakfast in the earlier posts on this blog will be bacon sarnies and the odd pan of sizzling sausages… All that changed in April 2022 after a health scare, breakfasts after that were to be a whole lot more healthy.

Following a complete change in diet, breakfasts were one of the first meals of the day to become vastly different. Gayle had discovered overnight oats and they soon became something that we made for our short overland trips up to the woods or on a day trip/camping weekend. The great thing about overnight oats is the fact that you prepare them in advance, simply add milk to the oats and leave them in the fridge overnight.

Overnight oats are an instant breakfast – a big advantage when you’re outdoors, sure, we like cooking just like anyone else but in the Spanish summer sometimes it’s good to keep things cool and simple.
An overland breakfast like this can be varied through a whole range of toppings, we tend to use fruit and a drizzle of honey then adding almonds and hazelnuts, it’s all very healthy not to mention filling alongside the giant mug of decaf coffee.

You can check out more overnight oaty stuff on my wife’s blog where she writes about diet after stroke and how we have managed to adopt a different approach to food and incorporate more exercise into our daily lives. Overlanding plays it’s part through getting us out into the fresh air, out into nature and walking a lot more too which, for recovery is a big positive.
